the fact that he still works six days a week. On his day off he is enjoying
getting to know his colleagues in the restaurant industry, tasting the fare in
the island’s other restaurants and slowly learning to speak English.
He has created new dishes for the restaurant, which draw on the culinary
heritage of royal Thai cuisine and here shares a traditional Thai recipe with
a Kiwi twist – just adjust the heat to your liking.
Papaya salad with New Zealand green-lipped mussels
3 fresh chillis
3 teaspoons peanuts
2 teaspoons fresh chopped garlic
4 cherry tomatoes
1 tablespoon Thai fish sauce
1 tablespoon palm sugar
1 tablespoon lemon juice
Three pieces long bean
500 grams green papaya
A handful of mung beans
12 New Zealand green-lipped
mussels, cleaned and steamed
Using a mortar and pestle, gently
crush the first ingredients to release
and combine the flavours. Gently add
the grated carrot and papaya, then toss through the mung beans and plate
around the steamed mussels on their half shells.
Share and share alike
There has been a little hint of summer in the air this
week and a wine to match those approaching balmy
climes is surely a rosè. This week’s wine was made
possible through the spirit of cooperation and neigh-
bourliness in the Wairarapa. When David and Coleen
Boyd established Lynfer Estate in 2000, it coincided
with their neighbour planting an olive orchard. These
two budding horticulturalists shared one tractor, one
shed, built one irrigation system and one access road. This spirit carries through
to the name of the estate, which is the joining of their daughters’ names Jennifer
and Lyndsay. The Boyds originally supplied their grapes to other wineries but have
been producing under their own label for the past three years.
The Lynfer Estate Rosè is an alluring salmon-peach colour and is made from
pinot noir in an off-dry style. There is a tantalising inkling of sweetness redolent of
rosewater and redcurrants which will cut a path through the heat of this week’s spicy
mussel dish. The racey ripe fruit characteristics are harmoniously curtailed by crisp
acidity which makes this an enlivening drop. This rosè will collude perfectly with
this week’s Thai flavoured dish and is definitely the wine to languish over as the
