Favourite food memory: My friend Amber and I were on a home
tour and one of the tastings on offer at one of the houses was an amaz-
ing layered cheesecake brownie. We were both in food heaven. This
is one of my most treasured recipes now and I love seeing the look on
people's faces when they taste it too. Pure indulgence.
I wouldn't be without: My digital scales...a must for baking. I also
couldn't live without my precious coffee machine -- and not just for
coffee. I make the fuffest scrambled eggs and the creamiest custard
using the steam wand! It's brilliant for quick heating when you don't
want to burn the bottom of a pan on the cooktop. Give it a go.
Favourite ingredient: When I'm cooking, I love basil, feta or red
onions. When baking, I love the subtle favor of good quality vanilla
beans...or fresh espresso.
Best local ingredient: Waiheke olive oil and olives. And freshly
roasted coffee beans!
Most infuenced by: The internet! I love trawling through recipes
and food blogs when looking for inspiration in the kitchen. I can
spend many hours fnding the perfect recipe.
I love to eat at: Anywhere with good friends and good food -- and if I
don't have to do the dishes, even better. I love summer dining, casual
alfresco meals with an array of fresh, tasty salads.
Favourite fast food: Homemade burritos -- the kids love them and
they're a good healthy option.
Best ever foodie tip: Don't be afraid of playing around with recipes.
I love to 'blend' recipes or use them as a starting point for my own
creations. I also love to 'hide' things from the kids, like lentils and
chickpeas in a vegetarian lasagne.

The Hungarians have been producing it for
over 500 years, the Germans for 250 and now
we are producing it here on Waiheke; I'm talk-
ing about late harvest wine.
This week's wine is the result of a chal-
lenging vintage in 2011. It is the newest
sibling in the Passage Rock family of wines,
the Late Harvest Viognier 2011. This wine was
produced form the second pick of the viognier,
and due to a lot of rain, some botrytis cinerea,
or noble rot, had begun to form on the grapes.
This dehydrates the grapes by removing much
of the the water content while leaving the sweet
fruit content. Under the divination of the winemakers hands, this last pick
fruit was transformed into a gorgeous amber-coloured dessert wine.
It is the perfect little sipper to have beside this week's sweet treat. It
elicits aromas of burnt toffee like crème brulee in a glass and has favours
of roasted stone fruit. It is not syrupy and cloying as some sticky wines
can be, but instead has a sumptuous intensity rounded off by a good acid
structure. It is the perfect citrine elixir to soothe any of those rough winter
vocal chords. However you like to fnish your meal, either on a sweet note
with dessert or a savoury one with cheese or simply with coffee, this is a
wine to put the exclamation mark on an evening.
